• 3 boneless pork loins – about 1 ½” thick
  • 1 tsp garlic powder mixed with ½ tsp black pepper
  • One box of stuffing mix (I use Stovetop chicken flavor)
  • 1/3 cup chopped onion (I use red for color)
  • 2 tbls fresh thyme
  • 2 cloves of finely chopped garlic
  • Chicken stock
  • Six washed carrots
  • Three large Idaho potatoes washed cut into thirds (you can also substitute with green beans)
  • Salt and pepper
  • Olive oil
  • Make the stuffing according to package directions adding the onion, chopped garlic and thyme and set aside
  • Using a very sharp knife, slice the pork loins length wise along the long end being careful not to cut through ends or the other side. You are creating a pocket for the stuffing. See picture below.
  • Blend the garlic powder and pepper together and rub it into both sides of the pork
  •  Stuff the pockets with the stuffing
  • In 2-3 tbs of moderately hot olive oil, brown each side of the stuffed pork loins in a large oven-proof baking dish
  • Place the potatoes and carrots around the pork
  • Pour 1 ½ cup chicken broth over it all
  • Bake at 325 degrees for 60 – 70 mins.
  • Check in 60 mins. to see if pork is tender. Add more chicken stock if needed. The broth makes a delicious gravy.
  • Serve with fresh baguette if desired.
